Made 100% in house and aged in large medium char barrels for 5 years. Two types of yeast are used, one of which includes a white wine vintners yeast which produces a fruiter alcohol for an added layer of complexity. Mash is 68% non-gmo corn, 20% winter wheat, and 12% barley. All are grown locally in Wyoming. Bottled at 88 proof.
Tastes floral with brown baking spices and browned butter, vanilla crème, caramel, and a hint of cinnamon. Light and smooth in the mouth with a hint of mint. Medium length finish with toffee, spice, and fading vanilla.
