For their Reposado release, Fortaleza rests their tequila for about 7 months in re-chipped and re-charred American oak barrels.  The nose presents notes of lush cooked agave, vanilla, caramel, and oak.  The palate follows closely, with rich agave, vanilla, and butterscotch, with citrus, light peppery spice, and oak joining for the finish.

NOM 1493 Tequila Los Abuelos makes Fortaleza using traditional, artisanal methods.  They allow their agave to mature for at least 8 years before harvesting.  The pinas are then slow-cooked for 36 hours in a stone oven, cooling for additional 24 hours.  The cooked agave is then crushed with a Tahona (large round stone) before fermenting in open-air wood tanks over about 4 days.  The fermented agave is distilled twice on traditional copper stills.  Fortaleza is distilled to 92 proof so that less water is needed for bottling in order to better preserve the flavor of the agave.
